White Chocolate Chip Cranberry Oatmeal Cookies

This is hands down the most understated yet, unbelievably delicious cookie EVER.

Every single time that I've ever made this cookie, gifted this cookie mix (in jars) or brought this cookie to an event, without fail, someone picks it up, expecting your average oatmeal cookie, only to find out that it is so much more.

I love this cookie.  (Can you tell?)  And I want you making this cookie for Christmas.  I want someone to invite you over, or divide up the family list of things to cook & bake and I want you to nonchalantly say, "Oh, I'll just make a little batch of cookies."   I want them to be these!

So let's get to our recipe.

Now, first let me say that this particular cookie mix makes a really great Cookie-in-A-Jar gift idea.  Just because you have the contract of the beautiful color of the red dried cranberries and the white chocolate chip pieces.  It just kind of bounces off of the eye.  #photographerspeaking

If you're going to make these as baked cookies, they are the understated winner of all cookies, hands down.

Now that is my opinion, but I want you to test it out for yourself.

White Chocolate Chip Cranberry Oatmeal Cookies

Servings: Makes 2 dozen cookies

  • one stick butter or margarine, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup sugar
  • 1/3 cup packed brown sugar
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup quick-cooking oats
  • 1 cup orange flavored dried cranberries
  • 1 cup vanilla or white chips

  • Directions:
    (1) To prepare cookies: Combine all dry ingredients in a large mixing bowl; stir to combine. (2) Beat in butter, egg and vanilla.  Cover and refrigerate for 30 minutes.

    (3) Drop by the tablespoonfuls 2 in. apart onto ungreased baking sheets.
    (4) Bake at 375 degrees F for 8-11 minutes or until browned.
    (5) Remove to wire racks to cool.

Pro-tip: Do not allow these cookies to over-bake as doing so will dehydrate the white chocolate chips.  I bake mine to 11 minutes exactly and then take them out.

Let me know if you try these cookies.  I want to know if you love them as much as I do!
